My sons Famous Miracle Chocolate Chip Cookies
Picture this: My first time baking with my firstborn, he was about 8 months old, maybe 10. We lived in this tiny apartment (although not as small as the first one we lived in that had one bathroom that you had to go through the bedroom to get to), and I finally unpacked a brand new kitchen aid mixer that had been in storage since we got it as a gift at our wedding. I had only used it a handful of times and couldn’t wait to share baking with my son. We got about two ingredients in (butter and sugar), and I was letting them cream together, and he was playing with measuring cups. He somehow managed to toss them into the bowl of the mixer with it on, and the measuring cups won. My beautiful brand new barely used stand mixer broke. And baking with him has always kind of been like that.
He never really enjoyed it until watching a few seasons of The Great British Bakeoff and Kids Baking Championship in the past year or so. Then he tried his hand at eclairs and now wants to do things on his own as much as possible. I have this personal goal to raise boys that know their way around the kitchen, so I have been trying to take a step back and let him take a step up. He is high energy and does everything with a lot of heart, and that includes messes and paying attention to all distractions. He makes me laugh because somehow, whatever he is baking turns out and love how proud he is of himself. He made these cookies two times before he re-named them to his “Famous Chocolate Chip Cookies.” I added the miracle part because despite eggs smashed on the floor, flour covering the counter, and who knows how many dollars of vanilla he has spilled, they always turn out.
My greatest joy is to see my kids doing things on their own and figuring things out, and when it is baking, my Mama heart bursts even more.
Enough about him, let’s talk cookies. This recipe has been my go-to for almost half of my life now and never disappoints. I have made a lot of different recipes and always go back to these. Please give them a chance and then report back to me.
My Sons Famous Miracle Chocolate Chip Cookies
Makes about 30 cookies
Ingredients:
1 cup butter or margarine
1/2 cup white sugar
1 cup packed brown sugar
1 tsp. salt
2 tsp. vanilla
2 eggs
2 1/2 cups flour
1/2 tsp. baking soda
2 cups chocolate chips (or chocolate chunks)
Music that makes you want to dance
Directions
1. Preheat oven to 350°.
2. Turn on your favorite playlist and dance whenever you are feeling it while you make the cookies.
3. In a mixing bowl, or bowl of a stand mixer, combine the butter with both sugars; cream together until light and fluffy, stopping to scrape down the sides at least once.
4. Add in the salt, the vanilla, and eggs. Mix until well combined, stopping to scrape down the sides at least once.
5. Add in the dry ingredients: the flour and baking soda. Mix this until JUST combined.
6. Add in the chocolate chips and mix until well dispersed in the dough.
7. Drop tablespoon-size balls of dough onto a parchment or silicone lined cookie sheet keeping them about 2 inches.
8. Bake for about 8-11 minutes, when cookies are barely getting golden around the edges, they are done.
9. Let the cookies cool on a baking sheet for about 5 minutes before transferring to a wire cooling rack, or sneaking a taste.
10. Try to let them cool – but they taste delicious warm, so don’t try too hard.
